Chili Cook Off!!!

  1. I am not Chef Tell..........but what are your favorite recipies for chili, soups and stews? I would love to be able to make soup for the girls at work. We have "soup day" at the office every week, and someone brings in homemade soup. My last turn I took in Campbell's Simply Homemade.......

    Well... if ya want a great green chile chicken recipe here goes:

    Simmer a whole chicken in enough chicken stock to cover for one hour (add some onion skin from cut up onion you will use later, add carrot ends, and celery leaves)

    Cool chicken off on plate

    Add to simmered chicken broth cut up:

    Simmer 20 - 30 minutes (add carrots first they take the longest to cook)

    Then add cut up potatoes ( I love the goldent russets) and simmer another 20 minutes or so.

    You may now the chicken cut up

    Also add chopped green chile

    Serve with warm tortillas and or corn tortilla chips

    Adding 1cup of white wine to the chicken green chile stew is a nice variety

    I sometimes also saute the first addition of chopped onions in bacon.... ever so tasty....

    I have substituted black beans and ground turkey for the kidney beans and ground beef in a regular recipe. It was very yummy!

    I also like to add extra diced tomato.

    French onion soup
    Ingredients: 2 cans beef broth 1 medium onion 1 cup shredded chedder cheese

    Simmer (cooking pot with lid) onion in about 1/2 can beef broth until soft and tender

    Remove from heat and mash the onion with potatoe masher

    Add rest of broth and cook 5 more minutes

    Garnish with shredded chedder cheese (or croutons if you like).

    The texture makes this soup so good. Looks very "restaurant like"

    YUMMMY!!! Wow, all those sound wonderful !! My mom is one of those that can open the refrig and concoct either a soup or stew out of whatever happens to be there. I never caught on! I'll definetly try these!

    Here's one my family loves-it's a taco chili stew.....1lb ground beef browned and drained into a crock pot with a 16 oz can of tom puree, 1-8 oz can of corn and 2 -8 oz cans of any kinds of beans you have on hand(black,kidney,garbanzo are all good) add 1 package of taco seasoning and 1 package of Hidden Valley Ranch dressing mix-It's great to come home to dinner inthe crockpot...Serve with tortilla chips and whatever toppings you like(we like grated cheese and onions with sour cream....

    that is how i make sometimes it turns out great......sometimes it goes down the garbage disposal!!!!! :d

    I hate chili.....

    I just start throwing things in a pot usually for soups. I make a mean chicken dumpling soup, but I have no particular recipe for it.

    Go to fridge, pull out every veg you have, throw all in a pot with stock of your choice. Works everytime.

    Add pasta and a can of Italian tomatoes and call it Ministrone(?sp) They'll never know..old family recipe and all that.
