My husband and I are off to Vegas for the week next week, any suggestions about must sees or dos? We're definitely foodies so looking forward to some of the cool restaurants and definitely looking forward to the pool time!

Going up the Stratosphere tower to see the Strip may seem like a great idea but don't. The engineers won't even go up it... I suggest the Linq or I think at the Paris you can go up the Eiffel Tower. Make sure you stop by Fremont Street while you're here too. It may not be as glamorous as the Strip but the canopy light show is cool.
See the Bellagio fountains at night, it's beautiful. The TI doesn't do the pirate show anymore and I'm not sure if Mirage is still doing the volcano. Go to the Forum Shops at Ceasar's if you want to wander around in a cool place. Head out to Red Rock, it's only about half an hour away. You don't have to get out and hike or even go into the park and pay so see beautiful sites. I just drove through there the other day on my way home because I needed some calming beauty. The Mandalay Bay has a "Shark Reef" that has a bunch of different animals in it if you're into that sort of thing.
As far as restaurants I can name a few: Lola's Louisiana Kitchen does the big crawfish boils and other cajun foods. If you're into dinner and a show do the Knights of the Round Table thing at Excalibur. John Mull's Meats is a butcher shop and BBQ place that's awesome. If you go downtown in the Plaza there is a place called Hash House A Go Go, huge portions of delicious food. If you want to do a buffet get off the beaten path and go down I-15 to Saint Rose Pkwy there is a newer casino called The M that has an AMAZING buffet.

Are you going to any shows? We have seen the Cirque du Soleil shows Ka and The Beatles LOVE show and enjoyed both. We enjoy just walking and admiring the various interiors of the casinos.
The monorail between the Excalibur, Luxor and Mandalay Bay is free, as is the one from the Monte Carlo and the Bellagio, and the Mirage and TI. The monorail from the MGM to the Convention Center charges, but can be worth it when its hot.
If you enjoy Irish music, Nine Fine Irish Men an Ri Ra have live music every night. The Dueling Pianos ( there are a few of these) are pretty hit and miss.
And I love mojitos at the Rhumbar in front of the Mirage.

The High Roller! 55 story high ferris wheel with incredible views of the city. You ride in an enclosed pod - not feeling like you are dangling out in the sky.
