In about a week I will be moving into my own apartment with my 8 month old dog. She is crate trained and house broken. I will be living by myself. I work night shift (11pm-7am). At my parents house she was rarely alone. She was kept downstairs in the crate at night while I was working, and was alone downstairs during the day sometimes.

would this be okay? I feel bad leaving her alone at all but I know it is inevitable. While I am at work I would leave her in the kitchen with food/water instead of locking her in the crate all night.
I think he will be fine. I have 2 large dogs. Your lucky in that shes already crate trained and old enough to hold it. My first dog is a lab, I was single and lived by my self at the time and worked 12 hrs. I would run her like mad in the AM and PM. (be warned, labs look all cute and are know for being great, but are horrible creatures for the first 2 years)
I thought I would be nice and leave her in the bathroom. Lets just say it wasnt easy. Numerous doggy doo incidents smeared allllll over, chewed this and that, barking when I left ect. Now I can trust her with anything but food. I dont crate her anymore and she has the run of the house. She eats the cats food but thats the worst of it. But I did crate her for about 1.5 years (shes almost 3 now) 13 hrs at a time while I was at work untill she proved her trust. She didnt like it, but she tolerated it and now shes the best ever.
My 2nd dog is a husky mix, but pretty darn smart, is 8 months, got her as a puppy. She crate trained very fast. She didnt mind the crate but lately doesnt like the crate either as both dogs are free roaming on our property so being cooped up sucks. She can do it for 14 hrs if needed. I dont trust her yet and it will be a while before that happens.
So with that being said, I think your dog will be fine in the crate. I sleep with the dogs too so at least if the one is crated its only when im at work.
What ive also done, depending on your vehicle, I have a barrier in my SUV and the dogs go in the back and I let them out on my break. I feel a bit better doing that. But even that failed me a few times when the husky was a bit smaller squeezed through the cracks and ate my seatbelts...
Just make sure she has a rawhide/toys to chew on. Be carefull about giving water unless you know she will hold it untill you get home.
