What's for dinner tonight?

  1. I don't know what to cook anymore. I need quick and easy meals. Anyone want to share ideas?

    We had BBQ salmon (basically salmon broiled with BBQ sauce on top), sweet potatoes topped with brown sugar, and carrots. My little boy loves the salmon with BBQ sauce and a little bit of lemon. Wal-Mart has some fantastic frozen salmon fillets. I buy these because the salmon in the seafood department usually tastes too fishy. The BBQ sauce I use is Billy Bee's Honey BBQ sauce. It's yummy.

    Tonight we had Teriyaki Chicken Breasts, Chicken flavored Rice n' Roni, and whole green beans with bacon crumbles. My family loves Rice n' Roni. Plus it's quick and easy to make.

    We had honey mustard chicken, some boxed macaroni crud that the kids loved and pineapple.

    Home-made wonton soup, and before any of you are making faces, the wontons take about 5 minutes to make and cook. Always keep chicken soup in the freezer that you can defrost in the micorwave and you have a great and healthy instant meal...................you can add whatever else you want, fresh spinach, chicken, pork, anything.................

    I use the flavoring packet from Rice A Roni and cook brown rice. Usually add chopped onions and celery.

    Less than authentic Jambalaya is still good. Saute the onions, celery, garlic, and peppers (heat from bell to habenero). Add cajun or creole seasoning to taste. Cook rice with canned tomatos as part of the water. Include seafood/diced cooked chicken/sausage as your family likes (dry firm tofu is nice too.

    Simply RICE IS NICE!

    I made a big pot of turkey chili. Sautee onions, garlic, peppers and ground turkey. When done add some canned diced tomatoes and beans of your choice, and lots of chili powder. Quick, easy and healthy.

    Tonight since I'm in between 12 hour shifts, I'll microwave one of those whole ready-made chickens by Tyson, and a salad. During this I'll bake some salmon for work.

    Who knows what I'm having tonight but since Bry is home at 5, it better be SOMETHING! LOL! Maybe we'll do the grilling thing.

    Shishkebobs - YUMMY! I throw the meat and veggies (seperate containers) in a marinade the day before and it only takes a minute to put them on skewers and about ten minutes on the barbecue. Add a bag of already prepared salad and there's dinner. Everyone LOVES it in our house and all guests have pigged out on each visit. I buy the jumbo shrimp (when it's on sale buy one get one free), some steak, and some boneless skinless chicken breasts. We have all three each and every time and thoroughly enjoy it.

    Tonight I made cornbread (from scratch), and used it to make cornbread dressing (chicken broth, eggs, cream of chicken, cream of celery, onion, and actual celery) thrown into a crock pot to cook for 4 hours. Actually, it still lacks another hour. Getting pretty hungry... Yes, I'm a carb freak!
