Wellness/Fitness Thread for 6/18-03

  1. What do you do when it's dreary and rainy?? Pull out the Tae Bo tapes?? Pop in your Buns of Steel or Denise Austin work out tapes and work up a sweat...maybe you are a Richard Simmons fan and you "Sweat to the Oldies"??

    It is a good day to break out my new yoga tapes and start stretching. Good for the body, mind and soul. A time to relax and rejuvinate (with out taking rejuvex suppliment....lol) Of course, you could always be brave and break out the rain gear and still get out there and walk, run or jog. But that is for the die hard and brave, which I am not..

    And how has your water consumption been??? Still drinking plenty?? Limiting your caffeine consumption?? Still eating healthier and better?? With damp weather afoot, a comforting pot (crockpot) of chili with corn muffins is a perfect meal....this will be my dinner tonight, made healthier by making a white (chicken) chili......YUMmmmmm!

    Oh and another smoothie joins the ranks (daughter and I have decided that the Tropical Tango Smoothie was definitely different and would take getting used to). This one will make you think you are on a nice sandy beach in the Carribean.


    Pina Colada Smoothie

    1-6oz container of Yoplait Coconut Cram Pie lowfat yogurt
    1/4 frozen banana
    1 cup unsweetened frozen pineapple chunks (canned ones will freeze in about 40 minutes)
    1 cup unsweetened pineapple juice (the juice from 1 can of pineapple chunks in it's own juice is the equivalent to 1 cup)

    In a blender, place yogurt, frozen banana, frozen pineapple chunks and pineapple juice. Process until smooth, about 15-20 seconds. Pour half into a chilled glass and freeze left overs (when ready defrost 10 minutes and then blend for 30 seconds until creamy).

    Serving Size: 1 cup- 252cal, 5%fat (1.5g; 1g saturated), 89%carbs (56g), 6% protein (4g), <1g fiber


    White Chicken Chili

    6 skinless chicken thighs or boneless, skinless chicken breast to equal 1.5 lb
    1 lg onion, chopped (1 cup)
    2 cloves garlic, finely chopped
    1-14oz can of chicken broth (low sodium and fat free will work)
    1 tsp ground cumin
    1 tsp dried oregano leaves
    1/2 tsp salt ( it's okay to omit if desired)
    1/4 tsp red pepper sauce (tabasco-may also omit)
    2-15-16oz cans of great northern or cannelli beans, rinsed and drained
    1-15oz can white shoe peg corn, drained
    3 TBSP lime juice
    2 TBSP fresh cilantro or 1 TBSP dried cilantro

    1. Remove excess fat from chicken. Mix onion, garlic, broth, cumin, oregano, salt and pepper sauce in a 3 1/2 to 6 quart slow cooker. Add chicken.

    2. Cover and cook on low heat setting 4-5 hours til chicken is tender.

    3. Remove chicken from slow cooker. Use 2 forks to remove bones and shred chicken into pieces. Discard bones and return chicken to slow cooker. Stir in beans, corn, lime juice and cilantro. Cover and cook on low heat setting 15-20 minutes or until beans and corn are hot. Makes 8 servings.

    Cal:256 (cal from fat 45), Fat:5g (sat 2g), Cholesterol: 30mg, Sodium: 540mg, Carbs: 39g, Fiber: 8g, Protein: 24g.

    Vit A: 0%, Vit C: 6%, Calcium: 12%, iron: 30%.

    Hi - I have a bunch of chicken breasts left over . . I'll put them in the crockpot and try that chili.

    It is hot hot hot here though . . .wishing for a summer rainstorm. Fortunately here in the mountains it cools off at night.

    Give up caffeine? Nope. Two cups of coffee already today. But I am on my 4th week of the Atkins diet. And still working out at Curves (early this morning) and trying to walk or jog with my toddler. I've been thinking of putting a seat on my bike for my toddler and starting to ride with my teenage daughter in the evenings. I love to be outside.


    Taking my calcium supplements and prenatal vitamins (over 40 and still breastfeeding)


    I do drink alot of water or lemonade with Splenda for sweetner.

    Admit to a Diet Pepsi now and again.

    Not in the mood today. Another full week of rain, and I'm getting just a wee bit CRANKY about it ! So I'll eat chocolate instead. And drink a whole POT of coffee ! Water reminds me too much of ewhat's outside my window.... RAIN !

    Hey Jnette . . . I gonna sit down for my 3rd cup of coffee!! . . . . . .started to cloud up here and we may have that summer thunderstorm I was hoping for. I love those . . . just as long as it really rains.

    You're pushing that envelope, Steph ! R-a-i-n HERE is just another 4 letter word !!!

    But for you, I hope you get your refreshing ****, and that you enjoy every drop. Wish I could send you some of ours, and that you could send me even just a HALF ray of your lovely sunshine !

    As for me, I'll slink off to bed now, and await the next course of major thunderstorms and 2" of **** due tonight.... GRRRRRR !

    I'm not in the mood either, but going to drag myself to the gym later because I'm working 3 12-hour shifts in a row and won't do anything then.

    Well, I never said I had given up the caffeine guys and gals.....so sheath all claws......lol A bit of chocolate on a regular basis keeps one from bingeing on a regualr basis (maybe....lol) And to be quite hoinest, I did not feel like (and did not) exercise yesterday.

    Stevie....it was muggy and hot here yesterday in the evening.....I have found, after trying it a time or 2, that hot stuff cools ya off, so pour another cuppa coffee and CHEERS! I hope you enjoy the chili though.

    For Tweety, I bet you could substitute tofu for the chicken meat in that chili and if you want to make it completely veggie...use veggie broth instead of chicken broth.

    Well, my family is a bunch of die hard red chili with beef eaters and when I first made the white chili they were skeptical but once they tried it, my son...the picky eater, eats it May your family dine in good health and fart up a happy storm together after eating it Bon Apetite!!

    I can't imagine my family eating that but I'll try.

    On rainy days I use my treadmill. But today it caught on fire. I'm going to have to try someting new. No budget for a new treadmill just yet.
