Wellness/Fitness thread 5/18/03

  1. Good morning!

    Still a little dank here, but I am comforted by the fact that at least I don't have to move in this weather - so many of the students are still trickling out of town, and I have seen numerous small uhauls and pickup trucks parked around the apartment complex toting out boxes and such in this rain. It occurs to me that they do it because there is no option - leases are up and they HAVE to be out. I try and approach my exercising that way when I'm not into it - I try to think of it as not optional, but a mandatory part of my well-being.

    Kudos to those who kick themselves in the rear to exercise despite it feeling much better to stay curled up in a warm bed listening to the rain hit the roof. (Of course, *I'd* still be there if I didn't have to be at the hospital this morning, so I'll sign off and at least get my movement out of the way first thing! .)

    2 recipes this morning since my "happy feet" didn't get back to the computer soon enough lol. Those triple-time swings will wear a girl out!

    Almost Instant Fajitas

    4 boneless skinless chicken breast cut into strips
    vegetable cooking spray
    1 14 1/2 oz can diced tomatoes
    1 package taco seasoning
    1 red bell pepper cut into slices or squares
    1 green bell pepper cut into slices or squares
    1 15 oz can black beans
    shredded cheese
    1 large package tortillas (there are some really interesting flavored tortillas in the markets now often labeled wraps - jalepeno-flavored, tomato-flavored - very good!)

    1. Spray large fry pan with vegetable cooking spray.

    2. Cook the chicken strips over medium heat until browned (about 1-2 minutes).

    3. Add tomatoes, taco seasoning, and cut-up bell peppers.

    4. Toss over medium heat until ingredients are well-mixed and vegetables are tender.

    5. In a separate pan, heat black beans according to directions on can.

    6. Serve by layering beans, then chicken mixture, then shredded cheese onto warmed tortillas.





    Alternative Potatoes (these work on the grill, too, if you happen to have it fired up for something else )

    4 or 5 large potatoes
    1 large onion
    canned chopped green chilies, to taste
    1 - 2 tsp canola oil
    salt and pepper, to taste
    garlic salt, to taste
    vegetable cooking spray

    1. Peel potatoes, cut into large chunks. Chop onion in large chunks.

    2. Put potatoes, onions, and green chilies in a large bowl. Add 1 or 2 tsp. of canola oil. Season with salt, pepper, and garlic salt to taste.

    3. Spray cookie sheet with cooking spray. Spread out potatoes on cookie sheet, cover with foil. Bake at 350 for one hour.

    Mmmm, those sound good! I have never seen the flavored tortillas. Will have to keep an eye out for them.

    Well, still foggy and drizzly here, too, but I HAD my one allowed "blah day" for the month, so I'd best get at it before I find some other excuse... off to the bowflex !
