Wellness/Fitness thread 5/3/03

  1. Eek - really late with the thread today. I lost my connection before I could post the thread this morning and then it was off to work. Busy day, but I'm home now and looking forward to a cookout with friends (I'm bringing the veggie burgers - see below) and then we're off to the comedy show at a local bar. I get to be the designated driver . Try and take some time to laugh this weekend - it has to be good for the abs as well as the endorphins . We try to go hit the comedy club with friends every so often. It's always a good time. If you don't have one in your town, have friends over that you always enjoy being with. Spend some time just enjoying life.

    We went out jogging last evening - one of those nights where I was just "on" - you know when you are just ready to push yourself and feel like you can go forever. Take advantage of those times to stretch yourself. Why waste a good motivation day (they don't come around often enough! )

    (Bonus recipe as I did not have a chance to post one yesterday!)

    Black bean burgers

    2 (15 ounce) cans black beans, rinsed and drained
    1 sweet onion, minced
    2/3 cup breadcrumbs
    1 clove garlic, minced
    1 tablespoon sweet basil
    1 teaspoon dried oregano
    1 teaspoon ground cumin
    2 eggs
    salt and pepper

    Place black beans in a bowl and mash with a fork. Add remaining ingredients and mix well. Divide into 6-8 equal portions and shape into patties. Place patties on a medium-hot grill for several minutes per side.

    Serve with usual fixings.

    This is a great recipe for you herb gardeners, or you can adjust the amounts and use dried herbs.)





    Chick pea salad

    1 (14 ounce) can chickpeas, drained and rinsed
    2 medium tomatoes, peeled and diced
    2 small cucumbers, peeled and diced
    1 red onion, chopped finely
    1 tablespoon fresh coriander, chopped
    2 tablespoons fresh mint, chopped
    1 tablespoon finely chopped lemongrass (if you have it - I've never seen it anywhere so I've guessed and substituted chives with good results.)

    ---DRESSING---
    1/4 cup lime juice or lemon juice
    2 teaspoons oil
    1 clove garlic, crushed
    2 teaspoons grated fresh ginger
    1 small red chili, sliced finely
    1 teaspoon sugar

    Combine salad ingredients in a bowl. Mix dressing ingredients together and pour over the salad. Chill for at least an hour.

    Sooooooo.. THERE you ARE !!! Was LOOKING for this thread whn I got off work today... "hmmmmmm... where IS she" ???

    Well, even though I was up at 0300 and worked my tail off today, I came home and weed-eated the yard, then came inside and did my fullbody workout. It's so kool to see those muscles responding and growing... I love the idea of being able to sculpt your body into whatever shape you want ! A little more here, maybe less there... oh, shoulders need a bit more width and roundness... too kool ! I had really slacked off while I was in school... only had time to work and study... but now I'm back at it and muscle doesn't forget ! They respond so quickly, even if you have neglected them for a long while !

    Just had supper with hubby.. went out to eat.. had broiled salt and pepper catfish, salad and baked potato. Was yummy !

    In full agreement with the laughter...forget the "apple"... a good laugh a day keeps the doctor away !
