Eek - really late with the thread today. I lost my connection before I could post the thread this morning and then it was off to work. Busy day, but I'm home now and looking forward to a cookout with friends (I'm bringing the veggie burgers - see below) and then we're off to the comedy show at a local bar. I get to be the designated driver

We went out jogging last evening - one of those nights where I was just "on" - you know when you are just ready to push yourself and feel like you can go forever. Take advantage of those times to stretch yourself. Why waste a good motivation day (they don't come around often enough!
(Bonus recipe as I did not have a chance to post one yesterday!)
Black bean burgers
2 (15 ounce) cans black beans, rinsed and drained
1 sweet onion, minced
2/3 cup breadcrumbs
1 clove garlic, minced
1 tablespoon sweet basil
1 teaspoon dried oregano
1 teaspoon ground cumin
salt and pepper
Place black beans in a bowl and mash with a fork. Add remaining ingredients and mix well. Divide into 6-8 equal portions and shape into patties. Place patties on a medium-hot grill for several minutes per side.
Serve with usual fixings.
This is a great recipe for you herb gardeners, or you can adjust the amounts and use dried herbs.)
Chick pea salad
1 (14 ounce) can chickpeas, drained and rinsed
2 medium tomatoes, peeled and diced
2 small cucumbers, peeled and diced
1 red onion, chopped finely
1 tablespoon fresh coriander, chopped
2 tablespoons fresh mint, chopped
1 tablespoon finely chopped lemongrass (if you have it - I've never seen it anywhere so I've guessed and substituted chives with good results.)
1/4 cup lime juice or lemon juice
2 teaspoons oil
1 clove garlic, crushed
2 teaspoons grated fresh ginger
1 small red chili, sliced finely
1 teaspoon sugar
Combine salad ingredients in a bowl. Mix dressing ingredients together and pour over the salad. Chill for at least an hour.
