Wellness/Fitness thread 4/27/03

  1. Good morning!

    Getting a later start this morning. I've been guilty of shortchanging my sleep bank for several nights and it does catch up to you. The I gave blood yesterday on top of it. Apparently that equals a 10.5 hour sleep night . (Note to self: one can only get by on 5 hours a night for so long.)

    I've got my cup of herbal tea - is your water where you can reach it? Have you had some breakfast?

    We're planning on going out dancing tonight. There is a big gathering of all the area Arthur Murray studios and we'll get to see some of our fellow students competing (we're not that brave yet lol.)

    Spoke with my brother this morning. Sunday mornings make me a little philosophical. Am very fortunate to have an excellent relationship with my family. My father is the exception, but I've found over the years that it takes far more energy on my part to sweat the relationship we don't have than to just enjoy the ones I do. Is there some grudge you're holding? Some lingering thing from your childhood or the present that decreases your enjoyment of the great things and life you do have? Let's consider some forgiveness. In case you wonder what this is doing in a wellness thread, it does wonders for your sense of well-being to ditch old stuff you're dragging around. We've got enough to handle with just the present.

    Treat yourself with an oven-free recipe today...


    1 package (10 oz) frozen corn kernels
    1 can (15 oz) red kidney beans drained and rinsed
    1 can ( 14.5 oz) diced tomatoes (I like the ones with the diced green chiles in them )
    1/4 cup salsa
    1/4 cup chopped onions
    1 1/2 cups cooked rice
    1 tsp Worcestershire sauce
    1/4 tsp salt
    1/2 tsp pepper
    2 cups shredded reduced fat Cheddar cheese, divided
    6 green peppers. tops removed & seeded

    Combine all ingredients, except 1/4 cup cheese and green
    peppers. Stuff peppers. Arrange peppers in crockpot.
    Cover, cook on low 6-8 hours (high 3-4 hours). Sprinkle
    with 1/4 cup cheese during the last 30 minutes. Makes 6
