    It's a little chilly still here this morning, but this weekend promises to be gorgeous. Feels good to be shaking off the last vestiges of winter. So many of you have your warm weather activities planned and ready to jump into it as soon as nature cooperates. It's good many of us also have our "backup" workout plans for those yucky days. Don't let your progress be stymied by the weather report!

    Suzy made a good point that got me thinking about safety. If you are gong to be out and about in the wee hours, make sure you are on well-travelled areas and wearing bright clothing. Cyclists, do you have your helmets and reflectors? Rollerbladers - I know you've got your padding in place. Remember to warm up with some moderate activity before starting to decrease the risk of injury.

    Recipe for the day:

    Meatless Hopping John

    3/4 c uncooked long grain rice
    1 c frozen corn
    3 medium carrots, thinly sliced
    1/2 c each chopped red, green and yellow pepper
    1/4 c chopped onion
    4 garlic cloves, minced
    1 tblsp canola or vegetable oil
    1 1 pound can blackeyed peas, rinsed and drained
    1 1 pound can diced tomatoes, drained (I like it spicy - the ones with green chiles in them are great!)
    2 tblsp minced fresh parsley (or 1/2 tblsp dried)
    1 tsp dried thyme
    1/2 tsp salt
    1/4 tsp pepper
    1/4 tsp crushed rep pepper flakes

    Cook rice according to package directions. Meanwhile, in large nonstick skillet, saute the corn, carrots, peppers, onion, and garlic in oil about 6 minutes or until crisp-tender. Stir in the rice, peasa nd tomatoes. Bring to a boil. Reduce heat, cover and simmer for 5 minutes or until heated through, stirring occasionally. Add seasonings. Cook 2-3 minutes longer.

    Yay! I think the time-change-lag that I've been experiencing this week is finally GONE! For the first time since last week (pre-time change), I got up early on my own and did my one-mile tape! I thought of doing the 2-mile, but since it had been a week, I wanted to ease into it. I breezed through it & am feeling fantastic now. Of course it doesn't hurt that the sun is finally out again too!

    Guzzling my 1st bottle of water for the day as I type this. I swear it wouldn't surprise me if I grew gills one of these days.

    Oh, and Ratched...LOVE the recipes! Keep 'em coming! I love adding new "good for you" dishes to my personal cookbook!

    I think I am also over my time-change -lag, 2 12's in ED this weekend should give me the answer! Still chilly here, so I stayed insde and jumped on my mini-trampoline. Doing that really has helped cut my appetite in the evening so I don't munch and watch TV, and also I can't eat while jumping!
