Two Minute Meal You Could Eat Every Night

  1. I'm making myself a quickie dinner since my husband is working till midnight and my daughter begged me for a TV dinner :chuckle . I'm having ziti with marinara and lots of parmesan cheese. I was just thinking how easy pasta is to make, but it's so delicious. I could eat it every night. I eat pasta tossed with fresh or frozen veggies a lot too...How about you?

    BTW...I am a jar sauce SNOB! I always make my own and use the San Marzano tomatoes and the whole nine yards. I have hated jar sauce since time began until I tried Victoria Marinara! YUM! Try it, it's delicious and makes life a lot easier when you're not in the mood to make sauce.

    for a 2 minute meal, i would have to say bagel/english muffin with an omelette....breakfast is always my favorite meal....

    If i take my sunday evening and cut up the fresh foods, i have a fridge full of instant dinners for a week. I do this for lunch as well, saving the 120 bucks a month i used to spend at the cafeteria.

    I am a fruit freak. Summer rocks. I always have all kinds of fruit around ready to much on. Keeps me out of the bad stuff.

    Stouffer's Skillet Sensations grilled chicken with pasta and veggies in a parmesan sauce...throw it in a pan, cover, and cook on low about 10 minutes..TA DA!!

    Sometimes you can find it on sale for less than $4.00 and it feeds 3...not too shabby

    Steamed broccoli and carrots scooped over brown rice with a sprinkle of salt and pepper.
    I could honestly eat that every evening for a long long time.

    Does it take two minutes to call the pizza delivery place??? My husband has a saying (I have no idea where he got it from) "Pizza is like sex, even when it's bad, it's really pretty good..."

    Easiest trick: always keep some hear-boiled eggs in the frig. You can use them with just about anything. Chop and mix with a can of smoked salmon, or tuna fish or mushrooms or shrimp and crab.....Add mayo and you have an instant healthy salad and very quick.

    This is a great thread, we could all use some quick and easy meal ideas!
    So here is my favorite:

    Spegetti (or Rice) with Easy Shrimp Sauce (15 mins)

    1 pkg frozen shrimp (peeled and cleaned)
    1 pkg spegetti (or instant rice)
    1 can Campbells Cream of Shrimp Soup (delicious)

    1)Start frozen shrimp thawing under warm running water
    2)Then start your spegetti (or rice) cooking on the side.
    3)Saute' shrimp for 3-5 minutes in 1 TBL margarine, add seasoning as desired.
    4)Add Cream of Shrimp Soup and a half of can of water to Shrimp.
    5)Bring to a boil, then reduce heat to simmer for about 10 minutes.
    6)Serve over spegetti noodles or rice, french bread and a salad on the side if desired!

    they sell these vegetarian curry meals in ethnic stores (Ashoka brand). They come in foil packages. You pour them onto rice, zap for 2 min voila. Spicy, healthy and delish.

    Since my health hasn't been great lately, I've been taking home a lot of frozen cottage-cheese containers full of left-overs when I visit my parents. Umm nothing like Mom's cooking. Healthy too cause that's the only kind of stuff she cooks.
