Still Low-Carbing?

  1. Curious as to how many of you are actually still low-carbing? I love it. Feel much better after cutting out the sugar. Four of my students are also trying it and all have increased energy, don't get hungry as quickly, etc. Actually gave a low-carb cooking class at my home today that was met with great success. And over here, this is quite an accomplishment since they don't have sugar free foods available here.

    Interested to hear how the rest of you are doing..........................

    I've been off an on trying to stick to low glycemic foods. I notice South Beach has a new cookbook out and a small book that lists the allowed foods, and foods to eat sparinly and to avoid.

    I've been reading the book Superfoods Rx http://www.amazon.com/exec/obidos/AS...010876-7727307 and trying to incorporate some healthy foods into my diet. Some of his recommendations like blueberry jams and juices are a bit too high glycemic for my delicate system. Also been reading http://www.amazon.com/exec/obidos/AS...010876-7727307 which is good.

    Anyway, for me that's a bit better than low carbing it, which I know isn't what you asked.

    I'm a bit frustrated with Southeast Asian food, all the good sauces, chilis, etc have sugar as a main ingredient. I frequent an Asian food store all the time and get sauces, but really need to eat up what I have and quit buying them. If you have any recipes you'd like to share, post them, I'm sure others might be interested.

    Yep - still at it - down 20 lbs. since January. It's getting easier to stay with now since so many restaurants are offering low-carb options!

    How about a very fast and easy to make Peanut Sauce?


    Quick and Easy Peanut Sauce

    Chunky Peanut Butter (No added sugar)
    Water (1/3 amount of peanut butter)

    Place in small bowl and put in microwave, takes about one minute or so, depending on amount. Just add in amount of hot sauce or chilis
    that you like. Workds with just about everything. All of the pre-made ones hae sugar and this is so quick and easy.................

    Glad to hear you're still hanging in there, suzanne! I'm sticking with low-carb too......it's the only way I can lose weight without starving to death all the time. Small portions of protein foods stick to the ribs longer and are more satisfying to me than large amounts of low-fat foods. Tonight I made fried chicken with soy flour and seasonings, and the family never knew the difference! (I don't often fry things these days, so this was a treat for me.) I've had to learn new ways to fix things so I don't get bored, and to read labels---some foods that claim to be low-carb really AREN'T!

    And of course, exercise is vital.......trust me, you'll *feel* thin, long before you actually are. I can't believe how much more graceful and light on my feet I've gotten in the past couple of months, just since I started regular workouts. I'm still somewhere in the neighborhood of 270#, but I've already got some muscle definition and my balance has improved greatly. Can't wait to see what happens when I get closer to a relatively normal size.........Have you seen the latest photo of Queen Latifah? She's on the cover of (I think) Cosmopolitan this month, and she's lost a ton.......I think the size she is now will be about where I end up (of course, I'm much older than she is, and certainly nowhere near as pretty). She looks like she's a 14-16 now. It's not what our society would consider perfect, but it's doable, and at this point I'd be ecstatic to look the way she does.

    Still low-carbing here. I had lost a total of 60# in two years, then started eating the wrong things again, and had gained back 15#. I'm back to strict low carbing and have lost 5# in two weeks.

    I just found something new that's absolutely delicious! It's called Carb Countdown chocolate milk, made with Splenda, and it has only 3 grams CHO and 100 calories per 8-oz. serving. It tastes just like regular chocolate milk---not like the diet shakes I've been drinking---and the consistency is really creamy and rich, almost like whole milk (it's actually 2%). YUM!

    i am in love with carb countdown milk too! i drink a cup everyday and it is an excellent source of Calcium!

    Unfortunately, they do not sell Splenda or products containing Splenda over here. I have had several people bring it over for me----------------could never use anything else now. Love making chocolate mousse when I need my sugar fix (sugar-free jello pudding from the US sent over)---1 1/2 packages with one cup cream and one cup milk. PLUS a big handful of semi-sweet choc chips or just shavings form a dark choc candy bar. Much more saisfying than the candy bar and lasts for quite awhile. Can't eat too much of it at a time.

    Keep up the goodwork...............

    p.s. bought soy flour in Singapore a few weeks ago, still haven't tried it. any good recipes for using it?)

    That's way to easy. I just happen to have some peanut butter, that is just plain old crushed peanuts freshly made at the store. I'm going to try that and use it in my stir fry in the next could of days. Got some fresh red hot chilis at the Asian market yesterday too. Yummy.
