Starting Over!

  1. Well, I've been stuck at the same weight for a couple of months now, and I've had it! I'm going back on the Atkins induction diet tomorrow......two solid weeks of eggs, meat, cheese, and salads I hate it, but I've got to do SOMETHING to get things moving again.......I'm just soooo discouraged.

To be honest, I've been eating bread a lot lately---and I've noticed a rather significant change in my mood, energy level, and even my, um, intestinal function. In fact, I've begun to think I'm going to have to stay away from wheat products as strictly as I stay away from sugar, because my system has apparently become sensitive to these as well. So many of the effects are the same: increased gas, mood swings, less "get-up-and-go", and almost constant cravings.

Now, I didn't embark on this ambitious, 100-pounds-in-one-year effort to see it stall out six months into the program......I've resigned myself to the probability that I won't make it to 100 pounds off by Christmas, but I'd like to at least lose another 30-40# by then! I work out 5-6 days a week, 30-45 minutes at a time, so it's not being a couch potato that's got me stuck in a rut.......and by now, I should've gotten off the increased muscle mass=weight gain merry-go-round. The only logical conclusion is that I've strayed too far away from the program I started with, and I'll have to go slower, and be much more selective, when I get off induction and start adding back carbs.

Wish me luck........I'm going to need it! :uhoh21:

Good luck! Wheat is a very common allergy.

Please tell us your flourless quiche recipe. I am also dieting. Mainly salads, protein. I too do better off wheat. Processed carbs make me feel terrible.

I usually try to make four or five at a time and just keep in the refrigerator
to reheat in the can just use frying pans, non-stick, if the handles are safe for the oven.

Ingredients can be anything that you have on hand. Examples are: spinach, bacon, mushrooms --- mushrooms, grilled onions, broccoli, red peppers--
    ground beef, mushrooms, onions,sausage

Just brown the meat first, mix with other ingredients and place in pan.
For a more custard-like quiche, use eggs with whipping cream, or you can use
sour cream. I prefer them now with the cream and pour over the top.
Sprinke cheese chavings over the top and bake for about 25 to 30 minutes, depends on size of the pan. You can mix and match what ever you have in the house and they always taste great.

Please let me know if you come up with other ideas...............

    Good luck, Mjlrn97!

I'm also getting back on the Atkins induction today ... the day's gone well so far.

The flourless quiche sounds yummy - do you really get the "quiche" texture by baking it in the oven, even without a "crust"?
