RECIPES: Crockpot and other quick meals

  1. We're all crunched for time, so I thought it would be great if we could each post a recipe or two that has been a huge timesaver. Let's keep this thread to just the recipes - no recipe reviews or "That looks so good!" That way the recipes won't get lost I have a couple to post, but my oven timer just went off, so I'll have to come back later.

    Porcupine balls
    1 egg
    1 pound ground beef
    1 pkg beef flavor rice-a-roni

    Mix rice&vermicelli with beef and egg. Roll into little balls. Brown in a skillet. Add seasoning mix with the amount of water listed on the rice a roni box- 2 1/2 cups. Simmer 20 minutes or so until done. They look like little porcupines when the rice pokes out.

    Santa Fe Chicken

    2 cans corn (drained)
    1 can black beans (drained and rinsed)
    1 jar salsa
    2 lbs chicken (thighs or breast)
    shredded cheese

    Mix corn, black beans and 2/3 of salsa in crock pot. Layer chicken on top. spread remaining salsa on top of chicken. Cook 4 hours on high or 6-8 on low. Top with shredded cheese for last 30 minutes of cooking. Serve with sour cream. This is good the way it is or it can be served over rice if you have more time. Can be put together in 15 minutes and ready when you get home. You can use frozen corn if you prefer.

    I can't take credit for this, it's been on the Weight Watcher community site forever. (7 points.... 30 minutes mixing bowl to table) It's yummy. My kids love it.

    Chicken Baseball

    3oz. light cream cheese, softened
    2 tsp. light margarine, melted
    1/4 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. chopped onion
    2 cups cubed cooked chicken (the Perdue 10oz package = 2 cups)
    1 Reduced fat crescent rolls (8oz. tube)
    2 Tbsp skim milk
    Bread Crumbs

    In a mixing bowl, combine cream cheese, butter, salt, pepper milk and onion until blended. Stir in the chicken.

    Separate crescent dough into four rectangles and pinch together the perforations to seal. Spoon 1/2 cup of chicken mixture into the center of the dough. Pull opposite corners of the dough to the center and seal to form the baseball seams.

    Sprinkle each baseball with breadcrumbs and place on an un-greased cookie sheet.

    Bake at 350* for 20 minutes.

    Makes 4 Baseballs/4 servings. Add a nice green salad (from a bag, of course! and you have dinner done!)
