  1. ok all you nurses who love to eat, can anyone out there tell me how to make pumpkin or red-velvet whoopie pies, here's hoping some of you know what a whoopie pie is/ thanks

    Pumkin Whoopie Pies

    Ingredients

    2 cups packed brown sugar
    1 cup vegetable oil
    1 1/2 cups solid pack pumpkin puree
    2 eggs
    3 cups all-purpose flour
    1 teaspoon salt
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon vanilla extract
    1 1/2 tablespoons ground cinnamon
    1/2 tablespoon ground ginger
    1/2 tablespoon ground cloves
    1 egg white
    2 tablespoons milk
    1 teaspoon vanilla extract
    2 cups confectioners' sugar
    3/4 cup shortening


    Directions


    1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
    2 Combine the oil and brown sugar. Mix in the pumpkin and eggs, beating well. Add the flour, salt, baking powder, baking soda, 1 teaspoon vanilla, cinnamon, ginger and cloves. Mix well.
    3 Drop dough by heaping teaspoons onto the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Let cookies cool then make sandwiches from two cookies filled with Whoopie Pie Filling.
    4 To Make Whoopie Pie Filling: Beat egg white and mix with the milk, 1 teaspoon vanilla and 1 cup of the confectioners' sugar. Mix well then beat in the shortening and the remaining cup of confectioners' sugar. Beat until light and fluffy.

    I have not tried these but I thought they sounded wonderful and they received 4 stars on the site.

    Be REAL careful w/ raw egg whites. Do you know if there's something else you can use instead?

    maybe powdered merangue stuff? Or maybe, whack the top with a torch, kinda like a brulee? OR... Dream whip.... the powdered stuff..... it sounds like the same idea....

    thank you for the grandmas kitchen site i am eatting red velvet whoopie pies as we speak, for those of you who don't know what a whoopie pie is, its like a homemade oreo cookie , a big soft chocolate cookie with white cream filling, i live in pa. dutch country and these are really popular but now i have pumpkin and red velvets too yum

    I think I remember my Grandmother usint the un-spiced pumpkin pie filling as puree.


    This is really good, people who don't like pumpkin pie (me-custard ICK!) will eat it. Don't let the fact I figured this out from the holiday dessert fed to the puree diet patients at a LTC I worked at scare you away.

    Take one can of the spiced pumpkin pie filling (I use Libbys), mix in the eggs and canned milk according to the directions. Pour it into a glass casserole dish sprayed with coating spray and cover tightly. Bake it at the temperature on the can until its done when you stick a knife in it (like a pie). Recover it and cool/refrigerate. When it has cooled scrape it into a big mixing bowl and dump in 3/4 of a big carton of cool whip and beat the heck out of it until it is all the same color. Put it in a bowl. Eat it. It looks nicer if you sprinkle some graham cracker crumbs on it.

    You can also put it in pie crusts and serve as pie.

    REFRIGERATE!

    I could go for some roasted pumpkin seeds! But, I'll have to settle for popcorn!!
