My vegetable soup is super easy. I get flank steak or something similar, cut it into cubes, dredge in flour, salt, and pepper and brown in oil.
Throw into dutch oven or whatever. Add beef broth or water and vegetables. Season to taste, cook til done. The cooking time depends on the veggies you use... I usually use potatoes and carrots, stuff like that, and that takes a little longer. You can even use frozen veggies (I do that a lot).
I cook ALL THE TIME. I am the reason my wife now weighs about 30 lbs more than she did when we got together. In fact, I'm waiting for some brownies to cool right now.
Edited to add: I generally season my soup with garlic powder, black pepper, salt, cayenne pepper, and whatever else I feel like throwing in there. I'm rather spicy (in cooking, as well as in other things...
