I want a GOOD Vegetable Soup recipe

  1. Well, we're getting prepared for a winter storm..they're saying it is PROBABLY going to be in the northern part of the state, not the Central (where I am), but last time they said that, we had the first and only blizard I've ever seen (snow drifts and all!). So, we've learned to prepare when the meteorologist says there's a remote possibility.

    Anyhow, I'm going to make some chili and veg soup. Anyone have an awesome soup recipe?? I want something with beef in it...beyond that, I'm open.

    it is so cold here now and raining mixed with sleet. soup sounds good.

    as far as the soup recipe, i don't put as much in mine as others do. i have used beef but chicken breast is the meat of choice for my family.

    My vegetable soup is super easy. I get flank steak or something similar, cut it into cubes, dredge in flour, salt, and pepper and brown in oil.

    Throw into dutch oven or whatever. Add beef broth or water and vegetables. Season to taste, cook til done. The cooking time depends on the veggies you use... I usually use potatoes and carrots, stuff like that, and that takes a little longer. You can even use frozen veggies (I do that a lot).

    I cook ALL THE TIME. I am the reason my wife now weighs about 30 lbs more than she did when we got together. In fact, I'm waiting for some brownies to cool right now.


    Edited to add: I generally season my soup with garlic powder, black pepper, salt, cayenne pepper, and whatever else I feel like throwing in there. I'm rather spicy (in cooking, as well as in other things... )

The comfort kind that fills the entire house with its aroma and delights the taste buds with such gastronomical flavors that men savoring their last meal have requested "homemade vegetable beef soup like mama used to make."

    Chicken definitely won't cut it.

    Don't know if you do the crockpot thing or not, but I came up with this very highly rated recipe from Recipezaar.

    Crockpot Vegetable Beef stew

    1 lb boneless round steak, cubed
    1 (14 ounce) can diced tomatoes, do not drain
    24 fluid ounces beef broth
    3 beef bouillon cubes
    2 medium potatoes, peeled and cubed
    2 medium onions, chopped
    2 celery ribs, sliced
    2 carrots, chopped
    1/2 teaspoon basil
    1/2 teaspoon oregano
    1/2 teaspoon thyme
    1 bay leaf
    1/4 teaspoon pepper
    1 cup fresh peas or frozen peas

    1. Place all ingredients in crock pot.
    2. Cover and cook on low for 7-8 hours.
    3. Remove bay leaf before serving.

    don't be sorry, we all have different taste buds and desires for food and the soup we eat is what we love. i too know several men who do not eat it at all.

    this is the very reason i didn't impose my recipe on any one.

    but, the weather is still very cold in these parts of alabama
    [which is the reason i replied to the original post.]

    I like to see some corn and green beans in it too. Delirium, I think you are on to something there. And some elbow macaroni too. And if you're really on a roll, a handful of barley tossed in. And some rosemary seasoning.

    That ought to do it. Now, saltine crackers, cheese toast, buttered white bread, those 99cent hot rolls, or cornbread muffins?

    Thanks guys..ALL the recipes sound great. I made it earlier today and used all the veggies mentioned above..
    I finally broke down and called mom..
    my dad makes fun of me because i call mom everytime I cook and have done so ever since I moved out 9 yrs ago..lol SOOOO, i was trying real hard not to call her, but i could just taste HER soup..so I broke down

    well, it wasn't HER soup, but it's pretty good..
    I hate pasta in soup..it gets sooooo mushy..yuck

    i also made chili..now it's to die for!

    are we talking vegitarian or with a meat base? I use to Joy of cooking as my guide to making a good stock, and then I go from there. Making a good soup is easy once you know the fundamentals.

    YOU are NOT getting the nasty weather from me. All we have is rain and it's cold as heck. No snow. My poor 3 yr old got all excited because she saw the "s" word on the news. She's going to be heartbroken in the am..she's convinced she's going to get to build a snowman tomorrow. I keep trying to tell her it's not going to snow at our house and she says, "that's okay, we'll just go to granny's". Granny's is 10 miles away . The weatherman said it, and it's law..in her eyes.
