My grandma used to make a wonderful post-thanksgiving turkey noodle soup: onions, celery, carrots, sage seasoning, s&p, some noodles simmered in broth, with bits of turkey floating around. Or, make a lot of broth and freeze it, for use during the year (when you're not so sick of the taste of turkey, lol!). The soup might not use up all your leftovers, though, depending on how much you have left. Hot turkey sandwiches anyone???? Turkey chili????
