HELP!!! 25 people for Christmas dinner and I can't find my sweet potatoe recipe!

  1. I'm pretty sure it had brown sugar in there and MAY have had marshmallows. Do you have a recipe similar? If so, please share

    Also, I want to make sauteed mushrooms. You know with butter, onions and.... Share what special ingredients you use to make this dish DELISH

    I never have made that one, rn.

    My recipe is for the casserole with toasted pecans and caramel topping. Made with pet milk, sweet potatoes (or plain pumpkin in my case), sugar, vanilla, butter. Then, the topping with butter, brown sugar and pecans.

    It's called sweet potato casserole but, I use pumpkin.

    3 cups mashed sweet potatoes or 1 - 1 1/2 can plain pumpkin (normally I use 1 and 1/2 cans)

    1 cup pet milk
    1 stick melted butter (sometimes I use 1 and 1/2 sticks)
    1 cup white sugar
    2 beaten eggs
    2 tsp. vanilla

    Beat all above and place in oiled (Pam spray) dish.

    Topping:

    1 cup brown sugar
    1/3 cup flour
    1/2 cup chopped pecans
    1/4 cup melted butter

    (sometimes I double topping ingred. to make more topping)

    Mix topping and crumble/pour over top of other mixture. Bake 350 for 30-40 mins.......maybe a tad longer depending upon your oven.

    Hi

    I make a sweet potato recipie that is mashed.

    Cooked sweet potatoes--mash but not real finely--OK to leave some small chunks

    orange zest
    orange juice with some pulp in it
    brown sugar
    a little dab of butter

    all these are to taste & the mixture should be thick & not runny.

    After all is mixed together I either spoon the mixture into orange halves,
    or make it all in a casserole dish

    You then place marshmellows on top & slip this into the broiler until the marshmellows are browned.



    Mushrooms

    I saute mushrooms in butter & add crushed garlic; salt, pepper
    then I add some nice red wine & let them simmer a bit till tender.
    I usually do several types of mushrooms--button & portabello &others
    Everything again is to taste

    I don't use a lot of recipies

    Do you add the worschestire sauce AND red wine like Nursemary9 or just the sauce?
