hard boiled egg recipies?

  1. Have 3 kids and 3 dozen hard boiled, colored Easter Eggs to eat. I know enough to remove some yolks to reduce fat etc but I'd like some new ideas so they don't go to waste.

    You can chop them up (my mom used to even freeze them) to top salads or mix with dressings as egg salad sandwiches, or mix with tuna for tuna melts and tuna salad sandwiches, or tuna casseroles.

    Mix the chopped eggs with a can of smoked salmon. You can season with some chopped onion and lemon juice. And you will need mayonnaise to bind it together. This has been a favorite of mine for many, many years..........

    Make egg salad and flavor with some chopped mushrooms or olives.
    Instead of using bread, wrap in a lettuce leaf, or cucumber so that is looks like a sushi roll. You can also just scoop out the seeds from a cucumber and stuff it with either egg salad or tuna salad and then just make slices. Kids usually love these, at least over on this side of the world.

    Yum! I love egg salad..

    My Mom and MIL both make an asparagus casserole with cream-of-something soup, canned asparagus, cheese and boiled eggs. Definately not good for you, but pretty yummy.

    One of the restaurants here in town used to make a ham and egg pot pie that was delish!

    Creamed ham and eggs for dinner!
    YUM! a favorite dinner from my childhood. You can use bacon instead of ham too.
    Make a white sauce with milk and flour or cornstarch (look for the recipe on the side of the cornstarch box or in any cookbook) Season with salt and pepper. You can saute onions in a bit of butter to put in the sauce too. Chop up a bunch of boiled eggs and throw in some ham or some cooked bacon. Cook briefly on low to heat everything together and serve over toast points, biscuits (my favorite) or pastry cups.
