This is one of my favorites!

    Almond Chicken
1 can (14 oz) chicken broth
    1 slice bacon, diced
    2 Tablespoons butter
3/4-1 pound boneless chicken breasts, cut into 1-inch pieces
1 1/2 cup diagonally sliced celery
    1 small onion, chopped
1 can (4 oz.) sliced mushrooms, drained
    2 Tablespoons soy sauce
    1/2 teaspoon salt
    Hot cooked rice

    2/3 cup slivered almonds, toasted

Pour chicken broth into crock pot; cover and turn crock pot to high.

In large skillet, heat bacon & butter; add chicken pieces & brown quickly on all sides; with slotted spoon remove browned chicken, add to crock pot; quickly saute celery, onion & mushrooms in skillet until just slightly limp.

Add contents of skillet to crock pot with soy sauce & salt; stir well; cover & cook on low 6-8 hours or high 3-4 hours.

Serve over rice and top with toasted almonds.

No way!!!! How old are you? I do not mean that in a bad way, but I grew up with a mom who used a crock pot. I am now 41 years old and rely heavily on my crockpot. A crockpot is what you would call a slow cooker. It is the best thing ever invented! You can put your fodd-- whatever it may be-- in there in the mornin, and let it slow cook all day. When you get home from work, your meal will be ready. It is fantastic to use for pot roast and veggies, or soup beans, or ribs, just about anything.

Wal-Mart has nice size ones for $19. They even come with a small cookbook. It will be the best investment you make in the way of kitchen appliances!!!

My fear is that I would leave the thing running (cooking), and I would come home to ashes. -Andrea

    My best crockpot recipe is:::

    1- 4 or 5 lb. pot roast
1 or 2 cans of cream of mushroom soup (depending on how much gravy you want)
    1- cup sliced mushrooms
8 oz of your favorite beer.

Put all ingrediants in the crockpot and season to taste. Put the crock pot on High for about 6 hours and then on Low until you want to eat....the roast comes out sooo tender it falls off the bone. And it is even good for better pieces of meat also.

Thought I'd toss the thread up a notch again on the list to see if some more folks have any other good crock pot recipes that they've tried.
    Thanks ahead of time.
