Comfort Food

  1. To all my sick of winter, snowed in friends out there. What are you cooking these days to warm your soul? I am tired of cooking the same things over and over again, I seem to be in a rut. Today I am making meatballs in tomato sauce in the crock pot, frozen meatballs too, just too lazy to really cook. I could use some really easy quick recipies if you care to share.

    French toast is a favorite on cold days here.

    How about "mexican mix up" at least that's what we call it...
    1 can of corn drained
    1 can of chili
    1 can of diced tomatoes
    1 can of tamales sliced

    heat in pan and serve with grated cheese on top - also good with corn bread...

    great pot luck dish too...you can double or triple it and it works in the crock pot too!!

    I'm making chicken soup. We have had alot of homemade soup this winter. For lunch I am making pasta with shrimp and crab. It is frigid and snowy outside.

    cindyln, can I come over for lunch?? It sounds so good!!!!! (wiping away the drool...)

    I actually make slippery pot-pie sometimes. Homemade noodles...mmmmm. It gets better with reheating.

    Two Alarm Chili
    Ham and Beans with cornbread. (put some diced Jalepenos in the cornbread for a little "kick"!)
    "Homemade" pork bar-b-que in the crock pot. (Par-boil the ribs, then cook them in the crock pot in a bottle or two of your favorite bar-b-que sauce and at the end of the day pick the bones out and make sandwiches. After cooking all day in the crock pot, the meat just falls off of the bones.)
    Making a beef stew in the crock pot as I type this.

    making beef stroganoff tonight with turnip greens on the side. Weird combo eh? Deeeeelicious!

    Chicken noodle soup for lunch - best friend made it Sat. night and brought it over. I saved it since I knew we'd be snowed in today. I made oatmeal raison cookies this morning and I'm making barbequed pork steaks for dinner - slow cooked in the oven. I really like crock pot meals but I save them for work days. Nice to come home to dinner already made or close to it.

    potato soup ..easy and a good comfort food.mmmmmmmmmmmmm....I also like making tuna noodle s=casserole on a lazy day........

    I'm slowly acquiring more recipes for my huge crockpot! Last Sunday, I put in about 3-4lbs of boneless beef ribs (by themselves) and let them cook about six hours. Then I mixed up 2/3C chili sauce, 2/3 C ketchup, 1/2C molasses, 6 T lemon juice, and 4T mustard and added it to the ribs and let them simmer for another hour!!

    YUM!!!!!!!!!!

    I also like to mix up a commercial cake mix and just eat it raw!!

    I'm in Utah and we are DESPERATE for snow!! Too bad we can't share the East coast storms!!

    Any time I eat is comforting to me....

    I make a lot of stews and soups in the winter. Also some roasts in the crock.

    Usually though, we don't eat b/c I'm too lazy. That's called "Fend for yourself night"...

    Is mac and cheese from a box comfort food?
