Bailey's Irish Cream Cookies

  1. I just couldn't resist posting this recipe for you folks. It is sooooo easy, and the cookies are absolutely delicious!!

    5 cups crushed vanilla wafers (approximately 2 boxes)
    2 cups powdered sugar
    1/4 cup corn syrup
    1/2 cup Nestle Quik (or any kind of powdered chocolate)
    1 cup crushed cashews (you can leave these out if you want)
    1 cup of Baileys Irish Cream

    Combine all ingredients and refrigerate for at least 3-4 hours or overnight. When you are ready to make these cookies, allow the dough to sit out at room temperature for approximately an hour so they are easier to roll. Coat your hands with a dusting of powdered sugar and roll dough into small balls, a little smaller than a golf ball, and then roll each ball into more powdered sugar. Refrigerate in a tin container if possible, because for some reason the plastic containers don't allow the Bailey's flavor to really soak in the way a tin container does. These are great treats for dessert.....and are especially good with a cup of coffee.

    I have 2 more recipes for booze balls as I like to call them.

    Bourbon Balls (for the boys)

    3 cups finely crushed vanilla wafers
    2c powdered sugar
    1c finely crushed pecans
    1/4 cup cocoa
    1/2 c bourbon
    1/4c light corn syrup

    Mix wafers, powdered sugar, pecans, cocoa.
    Stir in bourbon and corn syrup
    Shape into 1" balls
    Roll in powdered sugar
    Refrigerate in tightly covered container.

    Coconut Rum Balls

    3 1/2 c finely crushed vanilla wafers
    1 c finely chopped pecans or walnuts
    1 1/3 c sweetened flaked coconut
    1 14-oz can sweetened condensed milk
    1/4 c rum
    1/3 c powdered sugar

    combine crushed wafers, nuts and coconut
    add condensed milk and rum, mix well
    chill 4 hours
    dip palms in powdered sugar and shape dough into 1" balls
    Refrigerate in tightly covered container. Can be stored in fridge for several weeks.

    Oooooh, those sound wonderful! I'm too tired to see straight tonight, but tomorrow morning I'll find my sisters recipe for rum truffles and share it.

    Haven't found that rum truffle recipe yet, but just got this from a friend, in case you are out of Bailey's:

    1 and 3/4 cup Irish whiskey.
    14 ounce can CONDENSED milk.
    1 cup whipping or light cream,
    4 eggs,
    2 tablesp choc syrup,
    2 teaspoon instant coffee,
    1 teasp vanilla,
    1/2 teaspn almond extract.
    Combine in blender. Blend `till smooth.
    Serve over ice. Use in a month.

    Think it will last a month?
