Where all my mommies at?!?!?
This a post in reference to the fact I feel like my daughter could be the poster child for chef boyardee lol. I have notice that for the past two years I can probably count on my fingers and toes how many homemade meals I've made. Now if it was just me I really wouldn't care, but being as though I have a growing child on my hands I know I have to do better. But I hate sacrificing study time to stir pasta. So I guess my question is do you have any ideas for quick meals to get me and my child through nursing school without being severely obese or malnourished?

To be honest.... While I'm really into helping my kid develop healthful eating habits.... During nursing school, I did serve him a lot of convenience foods: Ramen, Premade Mac n cheese, granola bars, etc (I was also on a budget) yogurt, cows milk (he loves it, i don't drink it as I'm semi- vegan, lol), water bottles with sugar free packets.
I've also done whole grain pastas with Premade sauce from health food stores-like pesto, spaghetti sauce, etc. at the health food stores you can find these sauces with fewer extra ingredients like preservatives, sugar and salt.
I've done the rotisserie chicken thing, too! I can make many meals from just one chicken- lasts us a few days.
I always tried to keep fresh fruit and fresh carrots in the house for him, too.
Now that my budget is healthier, because I'm working, but my time is still limited, I've been making some big batches of stuff that will last us: soups (mostly bean based), stir fries with brown rice, etc.
Yesterday we had microwaved homemade pizzas on whole wheat pita bread with veggies, cheese, tomato paste and pepperoni for him. (Home made, pre made vegan Seitan for me!)
Crock pots are awesome! I just have difficulty finding vegan recipes to make in them....
I plan to start keeping stuff for PB&J in the house. (I use p-nut butter that only has p-nuts as the sole ingredient, jelly that's pure fruit, and whole grain bread.
Oh! My fast food cheap go-to: deal taco family pack! $8.99 for 6 burritos and 6 tacos! Kinda healthy....not really! [emoji23]
